Sausage and Vegetable Shakshuka

I have had various health issues over the years which seem to have accumulated into one big mess that is me.

I am not going to put up with it anymore, I am taking back my life.

This is the first breakfast of the new, improved me. Eat for health.

I went to the GP the other day and he discussed the results of my latest pelvic ultrasound. I have a "suspicious" uterine polyp. While google says these are mostly benign the doctor said I have to have it removed and tested. He said in the meantime let's work on my weight. He is an advocate for a LCHF lifestyle and its various health benefits. 

We discussed what this meant. I talked about my previous attempt of staying below 20 carbs a day. I only lasted 3 weeks. The GP said 50 is a more sustainable goal and don't eat anything that grows below ground. I can do this!

So here is the recipe for the first breakfast of the rest of my life.

Sausage and Vegetable Shakshuka


Serves 1


Ingredients

1 tsp coconut oil
1 good quality Italian sausage
1 red capsicum
1 small zucchini
Pinch Chilli flakes
Pinch Nigella (black cumin) seeds
Pinch Oregano
1/2 can tomatoes
2 eggs (from my chickens) 

Method

  • Melt coconut oil over medium heat.
  • Squeeze meat out of sausage casing and fry meat in oil till lightly browned. Discard sausage casing.
  • Add diced capsicum, halved sliced zucchini, chilli, nigella and oregano and sauté on a lower heat until zucchini softens.
  • Add tomatoes and bring to boil.
  • Make a well in vegetable mix for each egg and crack each egg into its well.
  • Cover and cook on low until eggs are done to your liking. I like the whites white and the yolks runny.
  • Serve with salt and pepper.
Sorry I did not run the macros on this recipe as my GP recommended I don't take it to far. Just follow the general rules. Adequate protein, choose low carb vegetables and add fats.

I have decided to try and eliminate dairy as I think it may not suit me at all. It will be hard because many keto recipes contain cream, cheese and butter. I found that paleo keto recipes are more what I am after but they seem few and far between. Many of the recipes I have found say they are paleo/keto friendly but then have a warning that they contain dairy.


I will keep you updated on my journey, including doctors appointments, naturopath appointments (of which I have one next Friday) supplements I am taking, test results, recipes, food log and weigh-ins.

I am passionate about feeding my family healthy food on a budget. Maybe I can solve this dilemma and come up with a healthy meal plan that is affordable and suitable for the whole family. I'll keep you posted.
